Dried Cherry Foil-Wrapped Chicken

Carolyn Kumpe of Vendage & Co. Catering is sharing with you a recipe for one of our most requested appetizers. It's delicious any time of the year. Personally, an Amador Wine Country peppery Zinfandel or chilled, crisp Rose are my favorite pairings with these cherry fragrant and ginger packed, garlicky bites. Sticky, sweet, and salty tidbits of succulent Hoisin glazed chicken are cooked and served in little foil packages. This recipe is inspired by James Beard award winning author, and food goddess Carolyn Jung of Foodgal.com

Appetizers for 4-6

Ingredients

2 pounds skinless, boneless chicken thighs, cut into bite-size pieces

3 cloves garlic, peeled and minced

3 (1-inch) chunks of fresh ginger, peeled and minced

5 tablespoons light soy sauce

1/2 cup Hoisin sauce

1/4 cup ketchup

1 cup dried cherries, roughly chopped

1 teaspoon orange blossom or wildflower honey

1/8 teaspoon Sriracha

1/8 teaspoon sesame oil

1 tablespoon toasted sesame seeds

2 tablespoons green onions, thinly sliced on a bias

Directions

  1. In a medium bowl, combine chicken with the remaining ingredients. Stir well, cover and let marinate in refrigerator 2-3 hours.
  2. Preheat oven to 350 degrees.
  3. Using 12-inch-wide heavy duty aluminum foil, cut off a 6-inch length of foil. Cut this strip in half, yielding two 6-inch square pieces. Continue to cut more squares until you have 12 squares.

4. Lay your squares out on a counter. Place the chicken mixture in the center of each foil square, dividing it evenly. Use about a tablespoon of chicken per square. Cut more foil squares if needed.

  1. Fold in half diagonally to create a triangle. Fold the edge of each open side of the triangle over three times to seal well. Fold back each bottom corner.
  2. Place filled foil triangles on a baking sheet. Bake 25 minutes. Serve warm from the oven, carefully unwrapping the folded edges. Break out the Amador Zinfandel, Rose or perhaps a fruit forward Barbera
